Tuna Curry
The defining dish of Lakshadweep. Fresh skipjack tuna is cut into thick steaks and simmered in a rich gravy of coconut milk, turmeric, chilli, and curry leaves. The tuna is caught the same morning — its freshness is the whole point. The curry is eaten with rice or pathiri (a thin rice flatbread) and is served at virtually every meal. No two households make it identically; the ratio of coconut to chilli, the thickness of the gravy, the addition of raw mango or tamarind — these are the marks of a family's culinary identity.
